I thought to myself yesterday as I ate dinner that I should share my one eating "secret". It's a little uncomfortable, though, because I feel like I should be the last person to give advice on health and fitness (did you see my "before" picture??), so don't consider this as advice or anything like that. It's just a bit of information that you all probably already know or don't care much about, but that has worked well for me.
I regularly substitute grated cauliflower for white rice. (I know people use it in place of potatoes, as well, but I haven't tried that.) I grate my entire head at once in my food processor (and it makes a huge mess even then!) and then put a cup of it in the microwave with a tablespoon or so of water, nuke it for 2 minutes, and eat it. At around 25 calories per cup (and only 5 g of carb, half of which is fiberific), it's about 1/8 of the calories and, for me at least, just as filling. No, it doesn't taste just like rice (it's a little sweeter and not quite as chewy textured), but it's really morale-boosting to have something close to the starchy goodness the rest of my family eats on a regular basis and to not feel like I get to look forward to nothing but salad for the rest of my life.
